This is another recipe I got from a former co-worker. If you're at all familiar with TastyKake® peanut butter Kandy Kakes®, well these are like making your own at home. They taste very similar, if not just like the kind you can buy from the store. If you don't live within a reasonable proximity to Philadelphia, and have never heard of TastyKakes, then don't worry about it. Just make 'em. They're good.
Ingredients:
4 eggs
1 cup milk
2 cups sugar
dash of salt
1 tsp. vanilla
2 tsp. baking powder
2 tsp. oil
peanut butter
2 cups flour
8 oz. chocolate bar (or chocolate chips)
1 tablespoon shortening
Instructions:
Mix eggs and sugar. Add vanilla and oil. Mix. Add flour, milk, salt and baking powder. Mix till smooth. Bake in greased and floured 11x17 pan (cookie sheet) at 350 degrees for 18-20 minutes. Allow to cool slightly. Spread peanut butter on cake. Cool in refrigerator until firm. Melt 8 oz. chocolate bar (or 8 oz. chocolate chips) and 1 tsp. shortening in double boiler. Spread on top. Refrigerate until chocolate is firm - about one hour. Cut into 2-inch squares and enjoy!
