My mother started making this a year or two after I first went off to college. I don't know who shared the recipe with her, but I'm glad they did. This is some kickin' stuff! It'll give you bad breath, though.
Ingredients:
1 whole cooked chicken
8 ounces shredded pepperjack cheese
2 10½-ounce cans cream of chicken soup
¾ cup picante sauce
1 cup milk
1 large bag of Doritos® Tortilla Chips
Instructions:
Boil the chicken; shred into bite-size pieces. Grease or spray a 13x19" baking pan. Cover bottom of pan with crushed Doritos®. Layer shredded chicken over top of Doritos®. Gradually add milk and picante sauce to soup, stirring until well mixed. Spread shredded cheese on top of chicken. Pour soup mixture on top of that and spread evenly. Bake for one hour at 350 degrees or until brown and bubbling. Serve with a large bowl of crushed Doritos® to spread on top.
Recommendations:
I prefer to use 4 ounces of pepperjack cheese and 4 ounces of cheddar. This makes it slightly less spicy. This recipe assumes that you are using Nacho-flavored chips. Though I have never tried it, it may taste just as good or even better with one of the other Dorito® flavors.
