These are really bad for you, but really good for your taste buds. They're kind of like pancakes, and go great with maple syrup. The best part is, they're really easy to make!
Ingredients:
2 eggs
1 cup milk
1 4-oz. package saltine crackers
4 tbsp. butter
maple syrup
Instructions:
In a medium bowl, beat the eggs and milk together with a fork or wire whisk until completely blended. Crumble crackers into the egg mixture and stir gently. The batter will be lumpy. In a skillet over medium heat melt the butter. Pour in the egg and cracker mixture and cook, covered for about 5 minutes. Flip over and cook for another 5 to 7 minutes until done. Cut into 4 wedges and serve hot with warm butter and maple syrup.
