Spicy Jalapeño Corn Dip

One time when my wife and I were dating, we went to a party. I don't remember the exact occasion, but this dip was served, and my wife got the recipe. It's super-easy to make and is usually a big hit. I've probably made this stuff more often than anything else in my Kitchen.

Ingredients:

1 can of sweet corn
1 can of creamed corn
1 block of cream cheese or neufchâtel cheese
1 small can (7-11 ounces) of sliced jalapeño peppers

Instructions:

Mix all ingredients together in a small casserole dish. Heat uncovered in oven at 350 degrees for 15 minutes to soften cheese. Remove from oven and stir until melted cheese is thoroughly mixed with other ingredients. Return to oven for another 15 minutes, and then serve warm with tortilla or corn chips.

Recommendations:

You can add more or less jalapeño peppers to taste. We have also discovered that cooking this dish covered will increase the spiciness of the dip considerably. I suggest serving this with Fritos Scoops® corn chips.
